Macarons are finicky—one wrong step, and the entire batch is ruined. They took some time experimenting and refining, until they could create these creative takes on the french Macaron, not macaroon. Shells that are airy but never hollow, crisp but never too crunchy, and fillings that balance flavor and texture perfectly. Step aside France! The flavors are creative but never overwhelming. There’s a subtlety to them—a balance & it’s all about the balance - between texture, flavor, even the colors. They are beautiful, but not in a way that feels overdone. It’s simple, but thoughtful.
You can tell these aren’t just desserts to Gene and Rebecca. They’re expressions of care, patience, and a little bit of magic. Every batch reflects the time and effort it took to get here. These sweet, airy, and slightly chewy delights have their roots in France, dating back to the Renaissance when they were introduced by Catherine de’ Medici’s Italian pastry chefs.
